Directions 1. In small bowl stir together ricotta, sugar substitute and vanilla. Stir in chocolate morsels. 2. Twist apart each cookie. Scrape out filling. Spread ricottoa mixture over one side of each cookie. Top each with a strawberry half. Top with remaining cookie halves. Serve immediately.
